There are times when I get unexpected visitors and I need to prepare a quick snack to serve with tea. All this snack needs is some cooked rice and few spices. Very crunchy, serve with ketchup of chilli on the side.
Ingredients
Cooked Rice 1 cup
Green chilli chopped 1/4
Coriander, chopped 1 tsp
Spring onion, chopped 1 tsp
Cumin seeds 1/4 tsp
Salt to taste
Oil to fry
Mash the cooked rice well, add all the other ingredients. Mix well. Shape into small tikkis. Heat oil and deep fry. Serve hot.

Love this. But I normally have to add a binder, otherwise the tikki breaks. :O(
Actually cooked rice, once mashed is sticky enough to bind itself.Or if the rice seems dry, adda few tblsp of water to it and warm the rice, then mash. Should work without the binder. Try and lemme know. Glad to see you here.
